Ibihaza (spicy Sweet Potato Fritters)
Ibihaza, or Spicy Sweet Potato Fritters, are a popular snack in Rwandan cuisine. These fritters are crispy on the outside and soft on the inside, with a delightful blend of sweet and spicy flavors.
Ingredients
- 2 large sweet potatoes, grated
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Oil for frying
Instructions
- In a large bowl, mix the grated sweet potatoes, chopped onion, and green chilies.
- Add the flour, salt, paprika, and cayenne pepper to the bowl and mix until well combined.
- Heat oil in a pan over medium heat.
- Scoop a spoonful of the sweet potato mixture and carefully place it in the hot oil, flattening it slightly with the back of the spoon.
- Fry the fritters for 3-4 minutes on each side, or until they are golden brown and crispy.
- Remove the fritters from the oil and place them on a paper towel to drain any excess oil.
- Serve the ibihaza hot with your favorite dipping sauce or chutney.
