Ibihaza (spicy Sweet Potato Fritters)

Ingredients

  • 2 large sweet potatoes, grated
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Oil for frying

Instructions

  1. In a large bowl, mix the grated sweet potatoes, chopped onion, and green chilies.
  2. Add the flour, salt, paprika, and cayenne pepper to the bowl and mix until well combined.
  3. Heat oil in a pan over medium heat.
  4. Scoop a spoonful of the sweet potato mixture and carefully place it in the hot oil, flattening it slightly with the back of the spoon.
  5. Fry the fritters for 3-4 minutes on each side, or until they are golden brown and crispy.
  6. Remove the fritters from the oil and place them on a paper towel to drain any excess oil.
  7. Serve the ibihaza hot with your favorite dipping sauce or chutney.
