Icelandic Fish Pie (Íslensk fiskipíka)
Íslensk fiskipíka, or Icelandic Fish Pie, is a traditional dish from Icelandic cuisine that combines flaky white fish with creamy mashed potatoes. This comforting and hearty meal is perfect for a cozy dinner on a cold evening.
Ingredients
- 500g white fish fillets, such as cod or haddock
- 800g potatoes, peeled and cut into chunks
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 200ml milk (or dairy-free alternative)
- 50g butter (or dairy-free spread)
- 2 tbsp all-purpose flour (or gluten-free flour)
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Preheat the oven to 200°C (400°F).
- Place the fish fillets in a baking dish and season with salt and pepper. Bake for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
- While the fish is baking, boil the potatoes in a large pot of salted water until tender. Drain the potatoes and mash them with the milk and butter until smooth. Season with salt and pepper to taste.
- In a saucepan, sauté the onion and garlic until softened. Stir in the flour and cook for 1-2 minutes. Gradually whisk in the milk and continue cooking until the sauce thickens. Add the dried thyme and season with salt and pepper.
- Place the cooked fish in the bottom of a baking dish and pour the sauce over the top. Spread the mashed potatoes evenly over the fish and sauce.
- Bake the fish pie in the preheated oven for 20-25 minutes, or until the top is golden and the filling is bubbling.
- Serve the Íslensk fiskipíka hot, garnished with fresh herbs if desired.
