Icelandic Fish Pie (Íslensk fiskipíka)

Ingredients

  • 500g white fish fillets, such as cod or haddock
  • 800g potatoes, peeled and cut into chunks
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 200ml milk (or dairy-free alternative)
  • 50g butter (or dairy-free spread)
  • 2 tbsp all-purpose flour (or gluten-free flour)
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Place the fish fillets in a baking dish and season with salt and pepper. Bake for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
  3. While the fish is baking, boil the potatoes in a large pot of salted water until tender. Drain the potatoes and mash them with the milk and butter until smooth. Season with salt and pepper to taste.
  4. In a saucepan, sauté the onion and garlic until softened. Stir in the flour and cook for 1-2 minutes. Gradually whisk in the milk and continue cooking until the sauce thickens. Add the dried thyme and season with salt and pepper.
  5. Place the cooked fish in the bottom of a baking dish and pour the sauce over the top. Spread the mashed potatoes evenly over the fish and sauce.
  6. Bake the fish pie in the preheated oven for 20-25 minutes, or until the top is golden and the filling is bubbling.
  7. Serve the Íslensk fiskipíka hot, garnished with fresh herbs if desired.
