Ingredients

  • 2 celery stalks, diced
  • 4 cups fish or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables are soft, about 5 minutes.
  2. Sprinkle the flour over the vegetables and stir to coat. Cook for 2 minutes to remove the raw flour taste.
  3. Pour in the fish or vegetable broth and add the bay leaf. Bring the soup to a simmer and cook for 20 minutes.
  4. Add the fish fillets to the pot and simmer for an additional 10 minutes, or until the fish is cooked through.
  5. Stir in the heavy cream and season the soup with salt and pepper to taste. Simmer for another 5 minutes to heat the cream through.
  6. Remove the bay leaf and serve the Íslensk fiskisúpa hot, garnished with fresh herbs if desired.
