Icelandic Fish Soup (Íslensk fiskisúpa)

Ingredients
- 1 lb white fish fillets, such as cod or haddock
- 1 onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups fish or vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables are soft, about 5 minutes.
- Sprinkle the flour over the vegetables and stir to coat. Cook for 2 minutes to remove the raw flour taste.
- Pour in the fish or vegetable broth and add the bay leaf. Bring the soup to a simmer and cook for 20 minutes.
- Add the fish fillets to the pot and simmer for an additional 10 minutes, or until the fish is cooked through.
- Stir in the heavy cream and season the soup with salt and pepper to taste. Simmer for another 5 minutes to heat the cream through.
- Remove the bay leaf and serve the Íslensk fiskisúpa hot, garnished with fresh herbs if desired.
