Ingredients
- 1 lb white fish fillets, such as cod or haddock
- 1 onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 potatoes, peeled and cubed
- 4 cups fish or vegetable broth
- 1 cup heavy cream
- 2 tbsp butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
