Icelandic Lamb Curry (Íslensk lambakarrý)

Ingredients

  • 1.5 lbs Icelandic lamb, cut into cubes
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef or vegetable broth
  • 1/2 cup coconut milk
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onions and garlic, and cook until softened.
  2. Add the lamb cubes to the pot and brown on all sides.
  3. Stir in the curry powder, turmeric, cumin, coriander, and cayenne pepper, and cook for 1-2 minutes until fragrant.
  4. Pour in the diced tomatoes and broth, and bring the mixture to a simmer. Cover and cook for 1.5 hours, stirring occasionally.
  5. Stir in the coconut milk and simmer for an additional 30 minutes, uncovered, until the curry thickens.
  6. Season with salt and pepper to taste. Serve the lamb curry over steamed rice and garnish with fresh cilantro.
