Icelandic Lamb Kebabs (Íslensk lambakebab)

Ingredients

  • 1 1/2 lbs (700g) lamb, cut into 1-inch cubes
  • 1 red onion, cut into chunks
  • 1 bell pepper, cut into chunks
  • 8 cherry tomatoes
  • 8 wooden skewers, soaked in water for 30 minutes
  • For the marinade:
  • 1/4 cup (60ml) olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 cup (60ml) plain yogurt
  • 2 tablespoons fresh lemon juice

Instructions

  1. In a bowl, mix all the marinade ingredients together.
  2. Add the lamb cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated lamb, red onion, bell pepper, and cherry tomatoes onto the soaked skewers.
  5. Grill the kebabs for 10-15 minutes, turning occasionally, until the lamb is cooked to your desired doneness and the vegetables are tender and slightly charred.
  6. Serve the Íslensk lambakebab hot with rice, couscous, or flatbread, and enjoy!
