Icelandic Lamb Kebabs (Íslensk lambakebab)
Íslensk lambakebab, or Icelandic Lamb Kebabs, are a popular dish in Icelandic cuisine. These flavorful and juicy kebabs are perfect for a summer barbecue or a cozy winter meal.
Ingredients
- 1 1/2 lbs (700g) lamb, cut into 1-inch cubes
- 1 red onion, cut into chunks
- 1 bell pepper, cut into chunks
- 8 cherry tomatoes
- 8 wooden skewers, soaked in water for 30 minutes
- For the marinade:
- 1/4 cup (60ml) olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 cup (60ml) plain yogurt
- 2 tablespoons fresh lemon juice
Instructions
- In a bowl, mix all the marinade ingredients together.
- Add the lamb cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat the grill to medium-high heat.
- Thread the marinated lamb, red onion, bell pepper, and cherry tomatoes onto the soaked skewers.
- Grill the kebabs for 10-15 minutes, turning occasionally, until the lamb is cooked to your desired doneness and the vegetables are tender and slightly charred.
- Serve the Íslensk lambakebab hot with rice, couscous, or flatbread, and enjoy!
