Icelandic Lamb Stew (Kjötsúpa)

Ingredients

  • 2 lbs lamb shoulder, cut into chunks
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 parsnips, sliced
  • 1 rutabaga, diced
  • 1 leek, sliced
  • 1 celery stalk, sliced
  • 8 cups beef or vegetable broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the lamb chunks over medium heat.
  2. Add the chopped onion and cook until translucent.
  3. Add the remaining vegetables, broth, bay leaves, thyme, salt, and pepper.
  4. Bring the stew to a boil, then reduce the heat and simmer for 2 hours, or until the lamb is tender.
  5. Remove the bay leaves and season with additional salt and pepper if needed.
