Icelandic Lamb Stew (Kjötsúpa)
Kjötsúpa is a traditional Icelandic lamb stew that is hearty, flavorful, and perfect for warming up on a cold day.
Ingredients
- 2 lbs lamb shoulder, cut into chunks
- 1 onion, chopped
- 2 carrots, sliced
- 2 parsnips, sliced
- 1 rutabaga, diced
- 1 leek, sliced
- 1 celery stalk, sliced
- 8 cups beef or vegetable broth
- 2 bay leaves
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- In a large pot, brown the lamb chunks over medium heat.
- Add the chopped onion and cook until translucent.
- Add the remaining vegetables, broth, bay leaves, thyme, salt, and pepper.
- Bring the stew to a boil, then reduce the heat and simmer for 2 hours, or until the lamb is tender.
- Remove the bay leaves and season with additional salt and pepper if needed.
