Icelandic Lamb Stew (Íslensk lambagryta)
Íslensk lambagryta, or Icelandic Lamb Stew, is a traditional dish from Iceland that is hearty, flavorful, and perfect for warming up on a cold day.
Ingredients
- 1.5 lbs lamb shoulder, cut into chunks
- 2 onions, chopped
- 3 carrots, sliced
- 3 celery stalks, chopped
- 4 potatoes, diced
- 2 cups beef or vegetable broth
- 1 cup red wine
- 2 bay leaves
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Season the lamb chunks with salt and pepper.
- In a large pot, brown the lamb over medium-high heat.
- Add the onions, carrots, and celery to the pot and cook until softened.
- Pour in the red wine and let it simmer for a few minutes.
- Add the potatoes, bay leaves, thyme, and broth to the pot.
- Bring the stew to a boil, then reduce the heat and let it simmer for about 2 hours, or until the lamb is tender.
- Season with additional salt and pepper if needed, then serve hot.
