Ingredients
- 2 lbs Icelandic lamb, cut into chunks
- 3 large carrots, peeled and chopped

- 1 turnip, peeled and diced
- 1/2 cup pearl barley
- 8 cups lamb or vegetable broth
- 2 bay leaves
- Salt and pepper to taste
Instructions
- In a large pot, brown the lamb chunks over medium heat.
- Add the chopped onions and cook until translucent.
- Add the carrots, potatoes, turnip, and pearl barley to the pot.
- Pour in the lamb or vegetable broth and add the bay leaves.
- Season with salt and pepper, then bring the stew to a boil.
- Reduce the heat, cover the pot, and let the stew simmer for 2 hours, or until the lamb is tender.
- Remove the bay leaves and adjust the seasoning if needed before serving.
