Icelandic Lobster Bisque (Íslensk humar bisque)

Ingredients

  • 2 lbs fresh Icelandic lobster tails
  • 4 tbsp unsalted butter
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 1/4 cup all-purpose flour
  • 4 cups fish or lobster stock
  • 1 cup heavy cream
  • 2 tbsp tomato paste
  • 1/4 cup brandy
  • Salt and pepper to taste
  • Fresh chives, chopped (for garnish)

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onion, carrots, celery, and garlic. Cook until the vegetables are soft, about 8-10 minutes.
  2. Sprinkle the flour over the vegetables and stir to combine. Cook for 2-3 minutes to remove the raw flour taste.
  3. Gradually pour in the fish or lobster stock, stirring constantly to avoid lumps. Bring the mixture to a simmer and cook for 15 minutes.
  4. Add the lobster tails to the pot and simmer for 10-12 minutes, until the lobster is cooked through.
  5. Remove the lobster tails from the pot and let them cool slightly. Once cooled, remove the meat from the shells and chop it into bite-sized pieces.
  6. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
  7. Return the soup to the pot and stir in the heavy cream, tomato paste, and brandy. Season with salt and pepper to taste.
  8. Add the chopped lobster meat back into the pot and heat through. Serve the bisque hot, garnished with fresh chives.
