Icelandic Meatballs in Lingonberry Sauce (Íslenskar kjötbollur í berjasósu)

Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 small onion, finely chopped
  • 1 egg
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp ground nutmeg
  • 1/4 cup all-purpose flour
  • 2 tbsp vegetable oil
  • 1 cup lingonberry jam
  • 1/2 cup beef broth
  • 1/4 cup heavy cream

Instructions

  1. In a large bowl, combine the ground beef, breadcrumbs, milk, onion, egg, salt, pepper, and nutmeg. Mix until well combined.
  2. Shape the mixture into meatballs, about 1 inch in diameter.
  3. Dredge the meatballs in flour, shaking off any excess.
  4. In a large skillet, heat the vegetable oil over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes.
  5. Remove the meatballs from the skillet and set aside.
  6. In the same skillet, add the lingonberry jam and beef broth. Bring to a simmer, stirring to combine the jam and broth.
  7. Return the meatballs to the skillet, coating them in the lingonberry sauce. Simmer for an additional 10-15 minutes, until the meatballs are cooked through.
  8. Stir in the heavy cream and cook for another 2-3 minutes until the sauce has thickened slightly.
  9. Serve the meatballs hot, spooning the lingonberry sauce over the top.
