Ingredients
- 8 oz. Icelandic cod fillets, cut into chunks
- 8 oz. Icelandic shrimp, peeled and deveined
- 8 oz. Icelandic scallops
- 8 oz. fettuccine pasta
- 2 tbsp butter
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 cup fish or seafood stock
- 1 cup heavy cream
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Boil a large pot of salted water and cook the fettuccine according to package instructions. Drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the cod, shrimp, and scallops to the skillet, and cook until the seafood is just opaque.
