Ingredients
- 1 kg spare ribs
- 3 cloves garlic, minced
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 tomato, diced
- 3 tbsp soy sauce
- 3 tbsp sweet soy sauce (kecap manis)
- 3 tbsp vinegar
- 3 tbsp ketchup
- 1 tbsp sugar
- 1 cup water
- Salt and pepper to taste
- Oil for cooking
Instructions
- Heat oil in a large pan over medium heat. Sear the spare ribs until browned. Remove and set aside.
- In the same pan, sauté garlic and onion until fragrant. Add the bell peppers and tomato, and cook until slightly softened.
- Return the spare ribs to the pan. Add soy sauce, sweet soy sauce, vinegar, ketchup, sugar, and water. Season with salt and pepper. Stir well.
- Cover and simmer for 1 hour, or until the spare ribs are tender and the sauce has thickened.
- Serve the Iga Babi Asam Manis hot with steamed rice.
