Ingredients

  • 1 kg spare ribs
  • 3 cloves garlic, minced
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 tomato, diced
  • 3 tbsp soy sauce
  • 3 tbsp sweet soy sauce (kecap manis)
  • 3 tbsp vinegar
  • 3 tbsp ketchup
  • 1 tbsp sugar
  • 1 cup water
  • Salt and pepper to taste
  • Oil for cooking

Instructions

  1. Heat oil in a large pan over medium heat. Sear the spare ribs until browned. Remove and set aside.
  2. In the same pan, sauté garlic and onion until fragrant. Add the bell peppers and tomato, and cook until slightly softened.
  3. Return the spare ribs to the pan. Add soy sauce, sweet soy sauce, vinegar, ketchup, sugar, and water. Season with salt and pepper. Stir well.
  4. Cover and simmer for 1 hour, or until the spare ribs are tender and the sauce has thickened.
  5. Serve the Iga Babi Asam Manis hot with steamed rice.
