Iga Babi Jerk (jerk Pork Ribs)

Ingredients

  • 2 racks of pork ribs
  • 1/4 cup jerk seasoning
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 lime, juiced
  • 4 cloves garlic, minced
  • 1 onion, finely chopped
  • 1 scotch bonnet pepper, seeded and minced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a bowl, mix together the jerk seasoning, brown sugar, soy sauce, olive oil, lime juice, garlic, onion, and scotch bonnet pepper to make the marinade.
  3. Season the pork ribs with salt and pepper, then rub the marinade all over the ribs, covering them completely.
  4. Place the ribs in a roasting pan and cover with foil.
  5. Bake in the preheated oven for 1.5 to 2 hours, or until the meat is tender and begins to pull away from the bones.
  6. Remove the foil and increase the oven temperature to 400°F (200°C). Cook for an additional 10-15 minutes to caramelize the ribs.
  7. Once done, remove from the oven and let the ribs rest for a few minutes before serving.
