Iga Babi Jerk (jerk Pork Ribs)

This recipe combines the heat of jerk seasoning with the tenderness of slow-cooked pork ribs, creating a mouthwatering dish that is perfect for a special occasion or a casual weekend meal.
Ingredients
- 2 racks of pork ribs
- 1/4 cup jerk seasoning
- 1/4 cup brown sugar
- 2 tablespoons soy sauce
- 2 tablespoons olive oil
- 1 lime, juiced
- 4 cloves garlic, minced
- 1 onion, finely chopped
- 1 scotch bonnet pepper, seeded and minced
- Salt and pepper to taste
Instructions
- Preheat the oven to 300°F (150°C).
- In a bowl, mix together the jerk seasoning, brown sugar, soy sauce, olive oil, lime juice, garlic, onion, and scotch bonnet pepper to make the marinade.
- Season the pork ribs with salt and pepper, then rub the marinade all over the ribs, covering them completely.
- Place the ribs in a roasting pan and cover with foil.
- Bake in the preheated oven for 1.5 to 2 hours, or until the meat is tender and begins to pull away from the bones.
- Remove the foil and increase the oven temperature to 400°F (200°C). Cook for an additional 10-15 minutes to caramelize the ribs.
- Once done, remove from the oven and let the ribs rest for a few minutes before serving.
