Iga Panggang Nanas (pineapple Glazed Ribs)
Iga Panggang Nanas, or Pineapple Glazed Ribs, is a popular dish in Turks and Caicos Cuisine. The combination of tender ribs and sweet pineapple glaze makes this dish a crowd-pleaser at any gathering.
Ingredients
- 2 lbs pork ribs
- 1 cup pineapple juice
- 1/2 cup brown sugar
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- Salt and pepper to taste
Instructions
- Preheat the oven to 325°F (165°C).
- Season the ribs with salt and pepper, then place them in a roasting pan.
- In a saucepan, combine the pineapple juice, brown sugar, soy sauce, garlic, and ginger. Cook over medium heat until the sugar has dissolved and the sauce has thickened slightly.
- Pour the pineapple glaze over the ribs, covering them evenly.
- Cover the roasting pan with foil and bake for 1.5 hours.
- Remove the foil and continue baking for another 30 minutes, basting the ribs with the glaze every 10 minutes.
- Once the ribs are tender and caramelized, remove them from the oven and let them rest for 5 minutes before serving.
