Ika Lolo (baked Fish In Banana Leaf)
Ika Lolo is a traditional Melanesian dish that features baked fish wrapped in banana leaves, resulting in a flavorful and aromatic meal.
Ingredients
- 4 fish fillets
- 1 cup coconut milk
- 1 onion, sliced
- 2 tomatoes, sliced
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 lemon, juiced
- Salt and pepper to taste
- 4 banana leaves, for wrapping
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the coconut milk, onion, tomatoes, garlic, ginger, lemon juice, salt, and pepper.
- Place each fish fillet on a banana leaf and spoon the coconut milk mixture over the fish.
- Wrap the banana leaves around the fish to create parcels.
- Place the wrapped fish on a baking sheet and bake for 25-30 minutes, or until the fish is cooked through.
- Serve the Ika Lolo hot, directly in the banana leaves for a beautiful presentation.
