Ingredients

  • 4 fish fillets
  • 1 cup coconut milk
  • 1 onion, sliced

  • Salt and pepper to taste
  • 4 banana leaves, for wrapping

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the coconut milk, onion, tomatoes, garlic, ginger, lemon juice, salt, and pepper.
  3. Place each fish fillet on a banana leaf and spoon the coconut milk mixture over the fish.
  4. Wrap the banana leaves around the fish to create parcels.
  5. Place the wrapped fish on a baking sheet and bake for 25-30 minutes, or until the fish is cooked through.
  6. Serve the Ika Lolo hot, directly in the banana leaves for a beautiful presentation.
