Ingredients

  • 4 bell peppers, halved and deseeded
  • 1 lb white fish fillets, cut into small pieces
  • 1 cup coconut milk
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a pan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add the fish pieces to the pan and cook until they are no longer translucent.
  3. Pour in the coconut milk and add the curry powder, paprika, salt, and pepper. Stir well and let it simmer for 5 minutes.
  4. Preheat the oven to 375°F (190°C).
  5. Stuff the halved bell peppers with the fish and coconut mixture.
  6. Place the stuffed bell peppers in a baking dish and cover with foil. Bake for 20-25 minutes until the peppers are tender.
  7. Serve the Ika Masala hot and enjoy!
