Ingredients
- 4 bell peppers, halved and deseeded
- 1 lb white fish fillets, cut into small pieces
- 1 cup coconut milk
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon curry powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a pan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the fish pieces to the pan and cook until they are no longer translucent.
- Pour in the coconut milk and add the curry powder, paprika, salt, and pepper. Stir well and let it simmer for 5 minutes.
- Preheat the oven to 375°F (190°C).
- Stuff the halved bell peppers with the fish and coconut mixture.
- Place the stuffed bell peppers in a baking dish and cover with foil. Bake for 20-25 minutes until the peppers are tender.
- Serve the Ika Masala hot and enjoy!
