Ingredients
- 4 whole fish (such as snapper or mackerel), cleaned and gutted
- 8 shallots, peeled
- 4 cloves garlic, peeled
- 2 red chilies, seeded
- 1 teaspoon turmeric powder
- 2 tablespoons tamarind paste
- Salt to taste
- Banana leaves for wrapping
Instructions
- Using a mortar and pestle, grind the shallots, garlic, red chilies, turmeric powder, tamarind paste, and salt to make a smooth marinade.
- Make diagonal cuts on both sides of the fish and rub the marinade all over the fish, including inside the cuts. Let it marinate for 30 minutes.
- Wrap each fish in banana leaves, securing with toothpicks or kitchen twine.
- Grill the fish over medium-high heat for about 7-8 minutes on each side, or until the fish is cooked through and the banana leaves are charred.
- Serve the Ikan Bakar Makassar hot with steamed rice and sambal for a spicy kick.
