Ingredients
- 4 whole fish (such as snapper or mackerel), cleaned and gutted
- 8 shallots, peeled
- 6 cloves garlic, peeled
- 6 red chilies, stemmed
- 2 tomatoes, sliced
- 4 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 4 tablespoons tamarind juice
- Salt to taste
- Banana leaves for wrapping
Instructions
- Using a mortar and pestle, grind the shallots, garlic, and red chilies into a smooth paste.
- Season the fish with salt and spread the spice paste over the fish, inside and out.
- Place 2 slices of tomato, 1 lemongrass stalk, and 1 kaffir lime leaf inside each fish.
- Drizzle tamarind juice over the fish.
- Wrap each fish in banana leaves and secure with toothpicks.
- Grill the fish over medium heat for about 7-8 minutes on each side, or until the fish is cooked through.
