Ingredients

  • 4 whole fish (such as snapper or mackerel), cleaned and gutted
  • 8 shallots, peeled
  • 6 cloves garlic, peeled
  • 6 red chilies, stemmed
  • 2 tomatoes, sliced
  • 4 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 4 tablespoons tamarind juice
  • Salt to taste
  • Banana leaves for wrapping

Instructions

  1. Using a mortar and pestle, grind the shallots, garlic, and red chilies into a smooth paste.
  2. Season the fish with salt and spread the spice paste over the fish, inside and out.
  3. Place 2 slices of tomato, 1 lemongrass stalk, and 1 kaffir lime leaf inside each fish.
  4. Drizzle tamarind juice over the fish.
  5. Wrap each fish in banana leaves and secure with toothpicks.
  6. Grill the fish over medium heat for about 7-8 minutes on each side, or until the fish is cooked through.
