Ingredients

  • 4 pieces of fresh fish fillets
  • 8 kaffir lime leaves
  • 4 lemongrass stalks, bruised
  • 4 shallots, thinly sliced
  • 4 cloves garlic, minced
  • 4 red chilies, sliced
  • 1 teaspoon turmeric powder
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 4 tablespoons tamarind juice
  • 4 tablespoons coconut milk

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix together the shallots, garlic, red chilies, turmeric powder, salt, sugar, tamarind juice, and coconut milk to make a marinade.
  3. Place each fish fillet on a piece of banana leaf. Spread the marinade over the fish.
  4. Top each fish with 2 kaffir lime leaves and a lemongrass stalk.
  5. Wrap the banana leaves securely around the fish and secure with toothpicks.
  6. Grill the fish packets for 7-8 minutes on each side, or until the fish is cooked through.
  7. Serve the Ikan Bakar Pepes hot with steamed rice.
