Ingredients
- 4 pieces of fresh fish fillets
- 8 kaffir lime leaves
- 4 lemongrass stalks, bruised
- 4 shallots, thinly sliced
- 4 cloves garlic, minced
- 4 red chilies, sliced
- 1 teaspoon turmeric powder
- 1 teaspoon salt
- 1 teaspoon sugar
- 4 tablespoons tamarind juice
- 4 tablespoons coconut milk
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, mix together the shallots, garlic, red chilies, turmeric powder, salt, sugar, tamarind juice, and coconut milk to make a marinade.
- Place each fish fillet on a piece of banana leaf. Spread the marinade over the fish.
- Top each fish with 2 kaffir lime leaves and a lemongrass stalk.
- Wrap the banana leaves securely around the fish and secure with toothpicks.
- Grill the fish packets for 7-8 minutes on each side, or until the fish is cooked through.
- Serve the Ikan Bakar Pepes hot with steamed rice.
