Ikan Kuah Asam Pedas is a traditional fish stew from the Manado cuisine of Indonesia. This dish is known for its sweet and sour flavor, which is achieved by using a combination of tamarind, tomatoes, and various spices.
Ingredients
- 500g fish fillets
- 2 tomatoes, diced
- 1 onion, sliced
- 3 cloves garlic, minced
- 2 red chilies, sliced
- 2 Tbsp tamarind paste
- 1 Tbsp palm sugar
- 1 stalk lemongrass, bruised
- 3 kaffir lime leaves
- 2 cups water
- Salt to taste
Instructions
- Marinate the fish fillets with salt and set aside for 10 minutes.
- In a large pot, sauté the garlic and onion until fragrant.
- Add the tomatoes, red chilies, tamarind paste, palm sugar, lemongrass, and kaffir lime leaves. Cook for 5 minutes.
- Pour in the water and bring to a boil.
- Add the marinated fish fillets and simmer for 15-20 minutes until the fish is cooked through.
- Season with salt to taste.
