Ikan Tiga Rasa (Three-Flavored Fish)
Three-Flavored Fish (Ikan Tiga Rasa) is a classic Peranakan dish that combines sweet, sour, and spicy flavors to create a delicious and aromatic fish dish.
Ingredients
- 1 whole fish, cleaned and scaled
- 2 tablespoons tamarind paste
- 3 tablespoons palm sugar
- 1 tablespoon fish sauce
- 1 teaspoon chili paste
- 3 shallots, thinly sliced
- 3 cloves garlic, minced
- 1 red chili, sliced
- 1 stalk lemongrass, bruised
- 1 inch ginger, thinly sliced
- 1 tablespoon vegetable oil
- 1/2 cup water
- Fresh cilantro for garnish
Instructions
- Score the fish and rub with salt. Set aside for 10 minutes.
- In a small bowl, mix tamarind paste, palm sugar, and fish sauce. Set aside.
- Heat vegetable oil in a pan over medium heat. Sauté shallots, garlic, ginger, lemongrass, and red chili until fragrant.
- Add the tamarind mixture and water to the pan. Simmer for 5 minutes.
- Add the fish to the pan and spoon the sauce over it. Cover and cook for 15-20 minutes, or until the fish is cooked through.
- Garnish with fresh cilantro before serving.
