Ingredients

  • 1 whole fish, cleaned and scaled
  • 2 tablespoons tamarind paste
  • 3 tablespoons palm sugar
  • 1 tablespoon fish sauce
  • 1 teaspoon chili paste
  • 3 shallots, thinly sliced
  • 3 cloves garlic, minced
  • 1 red chili, sliced
  • 1 stalk lemongrass, bruised
  • 1 inch ginger, thinly sliced
  • 1 tablespoon vegetable oil
  • 1/2 cup water
  • Fresh cilantro for garnish

Instructions

  1. Score the fish and rub with salt. Set aside for 10 minutes.
  2. In a small bowl, mix tamarind paste, palm sugar, and fish sauce. Set aside.
  3. Heat vegetable oil in a pan over medium heat. Sauté shallots, garlic, ginger, lemongrass, and red chili until fragrant.
  4. Add the tamarind mixture and water to the pan. Simmer for 5 minutes.
  5. Add the fish to the pan and spoon the sauce over it. Cover and cook for 15-20 minutes, or until the fish is cooked through.
  6. Garnish with fresh cilantro before serving.
