Ikra (eggplant Caviar)

Ingredients
- 2 large eggplants
- 2 tomatoes, diced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C). Prick the eggplants with a fork and place them on a baking sheet. Roast for 30-40 minutes, or until the skin is charred and the flesh is soft.
- Let the roasted eggplants cool, then peel off the skin and chop the flesh.
- In a pan, heat the olive oil over medium heat. Add the chopped onion and cook until soft and translucent.
- Add the minced garlic, diced tomatoes, paprika, and cumin to the pan. Cook for 5-7 minutes, or until the tomatoes break down and the mixture thickens.
- Add the chopped eggplant to the pan and stir to combine. Cook for an additional 5 minutes, then remove from heat.
- Season the ikra with salt and pepper to taste. Let it cool to room temperature.
- Transfer the ikra to a serving dish, garnish with fresh parsley, and serve with pita bread or crackers.
