Ingredients

  • 2 large eggplants
  • 2 tomatoes, diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Prick the eggplants with a fork and place them on a baking sheet. Roast for 30-40 minutes, or until the skin is charred and the flesh is soft.
  2. Let the roasted eggplants cool, then peel off the skin and chop the flesh.
  3. In a pan, heat the olive oil over medium heat. Add the chopped onion and cook until soft and translucent.
  4. Add the minced garlic, diced tomatoes, paprika, and cumin to the pan. Cook for 5-7 minutes, or until the tomatoes break down and the mixture thickens.
  5. Add the chopped eggplant to the pan and stir to combine. Cook for an additional 5 minutes, then remove from heat.
  6. Season the ikra with salt and pepper to taste. Let it cool to room temperature.
  7. Transfer the ikra to a serving dish, garnish with fresh parsley, and serve with pita bread or crackers.
