Ingredients

  • 2 large eggplants, roasted and peeled
  • 2 tomatoes, diced
  • 1 onion, finely chopped
  • 1 red bell pepper, roasted, peeled, and diced
  • 3 cloves garlic, minced
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the diced tomatoes and roasted bell pepper, and cook for 5 minutes.
  4. Meanwhile, mash the roasted eggplants in a bowl and add them to the skillet.
  5. Stir well and let the mixture simmer for 20-25 minutes, stirring occasionally.
  6. Season with salt and pepper to taste.
  7. Remove from heat and let it cool before serving.
