Ikra (ukrainian Eggplant Caviar)
Ikra, also known as Ukrainian Eggplant Caviar, is a traditional dish in Cossack cuisine. It is a flavorful spread made with roasted eggplant, tomatoes, and bell peppers, perfect for spreading on bread or crackers.
Ingredients
- 2 large eggplants, roasted and peeled
- 2 tomatoes, diced
- 1 onion, finely chopped
- 1 red bell pepper, roasted, peeled, and diced
- 3 cloves garlic, minced
- 1/4 cup vegetable oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat the vegetable oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the diced tomatoes and roasted bell pepper, and cook for 5 minutes.
- Meanwhile, mash the roasted eggplants in a bowl and add them to the skillet.
- Stir well and let the mixture simmer for 20-25 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Remove from heat and let it cool before serving.
