Imli Ki Chutney (sweet And Sour Tamarind Chutney)

Ingredients

  • 1 cup tamarind pulp
  • 1 cup water
  • 1 cup jaggery (or sugar)
  • 1 teaspoon roasted cumin powder
  • 1 teaspoon red chili powder
  • 1 teaspoon black salt
  • 1/2 teaspoon ginger powder
  • 1/2 teaspoon garam masala
  • Salt to taste

Instructions

  1. In a saucepan, combine tamarind pulp and water. Bring it to a boil and then simmer for 5 minutes.
  2. Add jaggery (or sugar) and continue to simmer until it thickens, stirring occasionally.
  3. Once the chutney reaches a thick consistency, add roasted cumin powder, red chili powder, black salt, ginger powder, garam masala, and salt. Mix well and cook for another 2-3 minutes.
  4. Remove from heat and let it cool. The chutney will thicken further as it cools.
  5. Store in a clean, airtight container in the refrigerator for up to 2 weeks.
