Ingredients

  • 1 cup tamarind pulp
  • 1 cup jaggery (or brown sugar)
  • 1 teaspoon cumin powder
  • 1 teaspoon red chili powder
  • 1 teaspoon salt
  • 2 cups water

Instructions

  1. In a saucepan, combine tamarind pulp and water. Bring to a boil and then simmer for 10 minutes.
  2. Add jaggery, cumin powder, red chili powder, and salt. Cook for another 5 minutes until the chutney thickens.
  3. Let the chutney cool, then strain it through a fine mesh sieve to remove any remaining pulp or seeds.
  4. Transfer the chutney to a clean, airtight container and refrigerate until ready to serve.
