Ingredients
- 1 cup quinoa
- 1 1/2 cups water
- 1/4 cup diced red bell pepper
- 1/4 cup diced yellow bell pepper
- 1/4 cup diced cucumber
- 1/4 cup diced red onion

- 1/4 cup chopped fresh mint
- 1/4 cup extra virgin olive oil

Instructions
