Ingredients

  • 1 block firm tofu, cubed
  • 2 cups mixed vegetables (such as bell peppers, broccoli, and snap peas)
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 1/4 cup vegetable broth
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. In a large wok or skillet, heat the sesame oil over medium-high heat.
  2. Add the tofu and stir-fry for 5-7 minutes, until golden brown.
  3. Push the tofu to one side of the wok and add the garlic and ginger. Stir-fry for 1 minute.
  4. Add the mixed vegetables and stir-fry for 3-4 minutes, until tender-crisp.
  5. In a small bowl, whisk together the soy sauce, rice vinegar, honey, and vegetable broth. Pour the sauce over the stir-fry and toss to combine.
  6. Cook for an additional 1-2 minutes, until the sauce has thickened slightly.
  7. Remove from heat and sprinkle with chopped green onions and sesame seeds.
