帝王玉翠鱼 (Imperial Jade Fish) is a classic dish in Chinese Imperial Cuisine, known for its delicate flavors and beautiful presentation.
Ingredients
- 1 whole sea bass, cleaned and scaled
- 1 tablespoon soy sauce
- 1 tablespoon Shaoxing wine
- 1 teaspoon sugar
- 1 teaspoon cornstarch
- 1 teaspoon minced ginger
- 1 teaspoon minced garlic
- 1 cup chicken stock
- 1 cup snow peas
- 2 green onions, sliced
- 2 tablespoons vegetable oil
- Salt to taste
Instructions
- Score the fish on both sides and place it on a heatproof dish.
- In a small bowl, mix together soy sauce, Shaoxing wine, sugar, and cornstarch. Pour the mixture over the fish, ensuring it gets into the scores.
- Sprinkle the minced ginger and garlic over the fish. Let it marinate for 10 minutes.
- Pour chicken stock around the fish and steam over high heat for 10-12 minutes, or until the fish is cooked through.
- In a separate pan, heat vegetable oil and stir-fry the snow peas and green onions for 2-3 minutes. Season with salt.
- Once the fish is cooked, carefully pour the hot oil over the fish to create a sizzling effect.
- Arrange the stir-fried snow peas and green onions around the fish as a garnish.
