Ingredients

  • 1 whole sea bass, cleaned and scaled
  • 1 tablespoon soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon minced ginger
  • 1 teaspoon minced garlic
  • 1 cup chicken stock
  • 1 cup snow peas
  • 2 green onions, sliced
  • 2 tablespoons vegetable oil
  • Salt to taste

Instructions

  1. Score the fish on both sides and place it on a heatproof dish.
  2. In a small bowl, mix together soy sauce, Shaoxing wine, sugar, and cornstarch. Pour the mixture over the fish, ensuring it gets into the scores.
  3. Sprinkle the minced ginger and garlic over the fish. Let it marinate for 10 minutes.
  4. Pour chicken stock around the fish and steam over high heat for 10-12 minutes, or until the fish is cooked through.
  5. In a separate pan, heat vegetable oil and stir-fry the snow peas and green onions for 2-3 minutes. Season with salt.
  6. Once the fish is cooked, carefully pour the hot oil over the fish to create a sizzling effect.
  7. Arrange the stir-fried snow peas and green onions around the fish as a garnish.
