Ingredients
- 500g lotus seed paste
- 150g golden syrup
- 100g peanut oil
- 800g glutinous rice flour
- 100g water
- 12 salted duck egg yolks
Instructions
- In a large bowl, mix the glutinous rice flour with water to form a smooth dough.
- Divide the lotus seed paste into 12 equal portions and wrap each portion around a salted duck egg yolk.
- Divide the dough into 12 equal portions and flatten each portion into a circle.
- Place a lotus seed paste ball in the center of each dough circle and wrap the dough around the filling, shaping it into a round mooncake.
- Place the mooncakes on a baking sheet and brush the tops with a thin layer of golden syrup.
- Bake in a preheated oven at 180°C for 10 minutes, then remove and let cool for 15 minutes.
- Brush the mooncakes with a second layer of golden syrup and return to the oven to bake for another 15 minutes until golden brown.
- Let the mooncakes cool completely before serving.
