Imperial Mooncake Delights (帝王月饼美味)

Ingredients

  • 500g lotus seed paste
  • 150g golden syrup
  • 100g peanut oil
  • 800g glutinous rice flour
  • 100g water
  • 12 salted duck egg yolks

Instructions

  1. In a large bowl, mix the glutinous rice flour with water to form a smooth dough.
  2. Divide the lotus seed paste into 12 equal portions and wrap each portion around a salted duck egg yolk.
  3. Divide the dough into 12 equal portions and flatten each portion into a circle.
  4. Place a lotus seed paste ball in the center of each dough circle and wrap the dough around the filling, shaping it into a round mooncake.
  5. Place the mooncakes on a baking sheet and brush the tops with a thin layer of golden syrup.
  6. Bake in a preheated oven at 180°C for 10 minutes, then remove and let cool for 15 minutes.
  7. Brush the mooncakes with a second layer of golden syrup and return to the oven to bake for another 15 minutes until golden brown.
  8. Let the mooncakes cool completely before serving.
