Ingredients

  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp Shaoxing wine
  • 1 tsp sugar
  • 1/2 cup chicken broth
  • 2 tbsp vegetable oil
  • 1 tsp cornstarch
  • 1/4 cup water

Instructions

  1. Prepare the seafood by cleaning and deveining the prawns, slicing the squid tubes, and cutting the sea bass and lobster into bite-sized pieces.
  2. Heat the vegetable oil in a wok or large skillet over high heat. Add the ginger and garlic, and stir-fry for 30 seconds.
  3. Add the scallops, prawns, lobster, sea bass, and squid to the wok. Stir-fry for 2-3 minutes until the seafood is almost cooked through.
  4. In a small bowl, mix together the soy sauce, oyster sauce, Shaoxing wine, and sugar. Pour this sauce over the seafood in the wok.
  5. Pour in the chicken broth and bring to a simmer. In a separate bowl, dissolve the cornstarch in water to create a slurry. Add the slurry to the wok and stir gently to thicken the sauce.
