Ingredients
- 200g fresh scallops
- 200g tiger prawns
- 250g lobster tail
- 150g sea bass fillet
- 100g squid tubes

- 1 tbsp oyster sauce
- 1 tbsp Shaoxing wine
- 1 tsp sugar
- 1/2 cup chicken broth
- 2 tbsp vegetable oil
- 1 tsp cornstarch
- 1/4 cup water
Instructions
- Prepare the seafood by cleaning and deveining the prawns, slicing the squid tubes, and cutting the sea bass and lobster into bite-sized pieces.
- Heat the vegetable oil in a wok or large skillet over high heat. Add the ginger and garlic, and stir-fry for 30 seconds.
- Add the scallops, prawns, lobster, sea bass, and squid to the wok. Stir-fry for 2-3 minutes until the seafood is almost cooked through.
- In a small bowl, mix together the soy sauce, oyster sauce, Shaoxing wine, and sugar. Pour this sauce over the seafood in the wok.
- Pour in the chicken broth and bring to a simmer. In a separate bowl, dissolve the cornstarch in water to create a slurry. Add the slurry to the wok and stir gently to thicken the sauce.
- Once the seafood is fully cooked and the sauce has thickened, transfer the Imperial Pearl Seafood Medley to a serving platter.
