Ina Garten Beef Stew

Ingredients
- 2 pounds beef chuck, cut into 1-inch cubes
- 1/4 cup all-purpose flour
- 3 tablespoons olive oil
- 2 cups chopped onions
- 2 cups chopped carrots
- 2 cups chopped celery
- 2 cloves garlic, minced
- 1 cup red wine
- 3 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon fresh thyme leaves
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Dredge the beef cubes in the flour, shaking off the excess.
- Heat the olive oil in a large pot over medium heat and brown the beef in batches. Set aside.
- Add the onions, carrots, and celery to the pot and cook until softened.
- Add the garlic and cook for another minute.
- Pour in the red wine and scrape up any browned bits from the bottom of the pot.
- Return the beef to the pot and add the beef broth, tomato paste, thyme, and bay leaf.
- Season with salt and pepper, then bring to a simmer.
- Cover and cook for 1 1/2 to 2 hours, or until the beef is tender.
- Discard the bay leaf and adjust the seasoning if necessary before serving.
