Indian (kare-kareng Curry)

Ingredients
- 1 lb beef, cut into cubes
- 1 cup peanut butter
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tbsp curry powder
- 2 cups coconut milk
- 2 cups water
- 1 eggplant, sliced
- 1 bunch long beans (sitaw), cut into 2-inch pieces
- Salt and pepper to taste
Instructions
- Heat oil in a large pot over medium heat. Sauté the onions and garlic until fragrant.
- Add the beef cubes and cook until browned on all sides.
- Stir in the curry powder and peanut butter until well combined.
- Pour in the coconut milk and water. Bring to a boil, then reduce heat and let it simmer for 30 minutes.
- Add the eggplant and long beans. Cook for an additional 10 minutes or until the vegetables are tender.
- Season with salt and pepper to taste.
- Serve hot with steamed rice.
