Indian (kare-kareng Curry)

Ingredients

  • 1 lb beef, cut into cubes
  • 1 cup peanut butter
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp curry powder
  • 2 cups coconut milk
  • 2 cups water
  • 1 eggplant, sliced
  • 1 bunch long beans (sitaw), cut into 2-inch pieces
  • Salt and pepper to taste

Instructions

  1. Heat oil in a large pot over medium heat. Sauté the onions and garlic until fragrant.
  2. Add the beef cubes and cook until browned on all sides.
  3. Stir in the curry powder and peanut butter until well combined.
  4. Pour in the coconut milk and water. Bring to a boil, then reduce heat and let it simmer for 30 minutes.
  5. Add the eggplant and long beans. Cook for an additional 10 minutes or until the vegetables are tender.
