Ingredients

  • 500g chicken, cut into pieces
  • 2 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 3 cloves garlic, minced
  • 1 onion, thinly sliced
  • 2 tomatoes, diced
  • 200g bean sprouts
  • 3 tablespoons sweet soy sauce (kecap manis)
  • 1 tablespoon tamarind paste
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon ground white pepper
  • 4 cups chicken broth
  • 2 tablespoons cooking oil

Instructions

  1. In a large pot, heat the cooking oil over medium heat. Add the minced garlic and sliced onion, and sauté until fragrant.
  2. Add the chicken pieces to the pot and cook until they are no longer pink.
  3. Pour in the chicken broth and add the lemongrass, kaffir lime leaves, tamarind paste, ground turmeric, ground coriander, salt, and white pepper. Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes.
  4. After 30 minutes, add the diced tomatoes, bean sprouts, and sweet soy sauce to the pot. Let the soup simmer for an additional 10 minutes.
  5. Remove the lemongrass stalks and kaffir lime leaves from the soup before serving.
