Ingredients
- 500g chicken, cut into pieces
- 2 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 3 cloves garlic, minced
- 1 onion, thinly sliced
- 2 tomatoes, diced
- 200g bean sprouts
- 3 tablespoons sweet soy sauce (kecap manis)
- 1 tablespoon tamarind paste
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1/2 teaspoon ground white pepper
- 4 cups chicken broth
- 2 tablespoons cooking oil
Instructions
- In a large pot, heat the cooking oil over medium heat. Add the minced garlic and sliced onion, and sauté until fragrant.
- Add the chicken pieces to the pot and cook until they are no longer pink.
- Pour in the chicken broth and add the lemongrass, kaffir lime leaves, tamarind paste, ground turmeric, ground coriander, salt, and white pepper. Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes.
- After 30 minutes, add the diced tomatoes, bean sprouts, and sweet soy sauce to the pot. Let the soup simmer for an additional 10 minutes.
- Remove the lemongrass stalks and kaffir lime leaves from the soup before serving.
