Indonesian Beef Rendang Pizza

Ingredients

  • 1 lb beef, thinly sliced
  • 2 cups coconut milk
  • 5 shallots, finely chopped
  • 4 cloves garlic, minced
  • 3 red chilies, sliced
  • 1-inch galangal, sliced
  • 1 stalk lemongrass, bruised
  • 1 tsp turmeric powder
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp tamarind paste
  • 2 Tbsp brown sugar
  • Salt to taste
  • 1 pre-made pizza dough
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sliced red onion
  • 1/4 cup chopped cilantro

Instructions

  1. In a large pot, combine the beef, coconut milk, shallots, garlic, chilies, galangal, lemongrass, turmeric, coriander, cumin, tamarind paste, brown sugar, and salt. Cook over low heat for 2-3 hours until the beef is tender and the sauce is thick.
  2. Preheat the oven to 425°F (220°C).
  3. Roll out the pizza dough on a floured surface to your desired thickness. Transfer the dough to a pizza pan or baking sheet.
  4. Spoon the beef rendang mixture over the pizza dough, spreading it out evenly. Top with mozzarella cheese and sliced red onion.
  5. Bake the pizza in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese is bubbly.
  6. Remove the pizza from the oven and sprinkle with chopped cilantro.
  7. Slice the pizza and serve hot.
