Ingredients
- 1.5 lbs beef chuck, cut into cubes
- 1 can (14 oz) coconut milk

- 5 kaffir lime leaves
- 1 inch galangal, sliced
- 1 inch ginger, sliced
- 2 tbsp tamarind paste
- 2 tbsp brown sugar
- 1 tbsp vegetable oil

Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the shallots and garlic, and sauté until fragrant.
- Add the beef cubes to the pot and brown on all sides.
