Indonesian Beef Rendang Tacos

Ingredients

  • 1.5 lbs beef chuck, cut into cubes
  • 1 can (14 oz) coconut milk
  • 1 cup beef broth
  • 5 shallots, finely chopped
  • 4 cloves garlic, minced
  • 3 stalks lemongrass, bruised
  • 5 kaffir lime leaves
  • 1 inch galangal, sliced
  • 1 inch ginger, sliced
  • 2 tbsp tamarind paste
  • 2 tbsp brown sugar
  • 1 tbsp vegetable oil
  • Salt to taste
  • 8 small flour tortillas

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the shallots and garlic, and sauté until fragrant.
  2. Add the beef cubes to the pot and brown on all sides.
  3. Pour in the coconut milk and beef broth. Add the lemongrass, kaffir lime leaves, galangal, ginger, tamarind paste, and brown sugar. Season with salt to taste.
  4. Simmer the beef rendang over low heat for 2-3 hours, stirring occasionally, until the beef is tender and the sauce is thick and fragrant.
  5. Warm the flour tortillas in a dry skillet over medium heat.
  6. Assemble the tacos by filling each tortilla with a generous amount of beef rendang.
