Ingredients
- 1 lb beef, thinly sliced
- 2 potatoes, diced
- 1 can coconut milk
- 4 cups beef broth
- 3 shallots, finely chopped
- 3 garlic cloves, minced
- 2 bay leaves
- 1 lemongrass stalk, bruised
- 1 inch galangal, sliced
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp salt
- 1/2 tsp sugar
- 1/4 tsp white pepper
- 2 tbsp cooking oil
- 4 hard-boiled eggs, halved
- Fried shallots for garnish
Instructions
- In a large pot, heat the cooking oil over medium heat. Add the shallots and garlic, sauté until fragrant.
- Add the beef slices and cook until browned.
- Pour in the beef broth and coconut milk. Add the potatoes, bay leaves, lemongrass, galangal, turmeric powder, coriander powder, salt, sugar, and white pepper. Stir well.
- Bring the soup to a boil, then reduce the heat and let it simmer for 1 hour, or until the beef is tender.
- Once the beef is tender, remove the bay leaves and lemongrass stalk. Taste and adjust the seasoning if needed.
- Serve the soup in bowls, garnished with hard-boiled eggs and fried shallots.
