Ingredients

  • 1 lb beef, thinly sliced
  • 2 potatoes, diced
  • 1 can coconut milk
  • 4 cups beef broth
  • 3 shallots, finely chopped
  • 3 garlic cloves, minced
  • 2 bay leaves
  • 1 lemongrass stalk, bruised
  • 1 inch galangal, sliced
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp salt
  • 1/2 tsp sugar
  • 1/4 tsp white pepper
  • 2 tbsp cooking oil
  • 4 hard-boiled eggs, halved
  • Fried shallots for garnish

Instructions

  1. In a large pot, heat the cooking oil over medium heat. Add the shallots and garlic, sauté until fragrant.
  2. Add the beef slices and cook until browned.
  3. Pour in the beef broth and coconut milk. Add the potatoes, bay leaves, lemongrass, galangal, turmeric powder, coriander powder, salt, sugar, and white pepper. Stir well.
  4. Bring the soup to a boil, then reduce the heat and let it simmer for 1 hour, or until the beef is tender.
  5. Once the beef is tender, remove the bay leaves and lemongrass stalk. Taste and adjust the seasoning if needed.
  6. Serve the soup in bowls, garnished with hard-boiled eggs and fried shallots.
