Indonesian Biryani (nasi Kebuli)

Ingredients

  • 2 cups basmati rice
  • 500g chicken, cut into pieces
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 inches ginger, grated
  • 1/2 cup yogurt
  • 1/4 cup ghee or clarified butter
  • 1 cinnamon stick
  • 4 cardamom pods
  • 4 cloves
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon chili powder
  • Salt to taste
  • Fried shallots for garnish

Instructions

  1. Rinse the basmati rice until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. In a large pot, heat the ghee over medium heat. Add the cinnamon stick, cardamom pods, and cloves. Sauté for 1 minute until fragrant.
  3. Add the sliced onion, garlic, and ginger. Cook until the onion is soft and translucent.
  4. Add the chicken pieces and cook until they are no longer pink. Stir in the turmeric, cumin, coriander, and chili powder.
  5. Stir in the yogurt and cook for 5 minutes, allowing the flavors to meld.
  6. Add the soaked and drained rice to the pot. Pour in enough water to cover the rice by 1 inch. Season with salt.
  7. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  8. Fluff the rice with a fork and remove the whole spices. Serve the Indonesian Biryani garnished with fried shallots.
