Indonesian Biryani (nasi Kebuli)
Indonesian Biryani, also known as Nasi Kebuli, is a flavorful and aromatic rice dish that is popular in Indonesian Indian cuisine. This dish is a fusion of Indonesian and Indian flavors, creating a unique and delicious meal.
Ingredients
- 2 cups basmati rice
- 500g chicken, cut into pieces
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 2 inches ginger, grated
- 1/2 cup yogurt
- 1/4 cup ghee or clarified butter
- 1 cinnamon stick
- 4 cardamom pods
- 4 cloves
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon chili powder
- Salt to taste
- Fried shallots for garnish
Instructions
- Rinse the basmati rice until the water runs clear. Soak the rice in water for 30 minutes, then drain.
- In a large pot, heat the ghee over medium heat. Add the cinnamon stick, cardamom pods, and cloves. Sauté for 1 minute until fragrant.
- Add the sliced onion, garlic, and ginger. Cook until the onion is soft and translucent.
- Add the chicken pieces and cook until they are no longer pink. Stir in the turmeric, cumin, coriander, and chili powder.
- Stir in the yogurt and cook for 5 minutes, allowing the flavors to meld.
- Add the soaked and drained rice to the pot. Pour in enough water to cover the rice by 1 inch. Season with salt.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork and remove the whole spices. Serve the Indonesian Biryani garnished with fried shallots.
