Indonesian Chicken Satay Skewers (Brochettes de Poulet Satay Indonésiennes)

Ingredients
- 1.5 lbs (700g) boneless, skinless chicken thighs, cut into 1-inch cubes
- 1/4 cup (60ml) soy sauce
- 2 tablespoons (30ml) honey
- 2 cloves garlic, minced
- 1 teaspoon (5g) ground turmeric
- 1 teaspoon (5g) ground coriander
- 1/2 teaspoon (2g) ground cumin
- 1/4 teaspoon (1g) cayenne pepper
- 1/4 cup (60g) creamy peanut butter
- 2 tablespoons (30ml) lime juice
- 1/4 cup (60ml) coconut milk
- Salt and pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, whisk together the soy sauce, honey, garlic, turmeric, coriander, cumin, cayenne pepper, peanut butter, lime juice, and coconut milk. Season with salt and pepper to taste.
- Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat the grill or stovetop grill pan over medium-high heat. Thread the marinated chicken onto the soaked skewers.
- Grill the skewers for 3-4 minutes per side, or until the chicken is cooked through and has nice grill marks.
- Serve the chicken satay skewers with extra satay sauce for dipping, and enjoy!
