Indonesian Chicken Satay Skewers (Brochettes de Poulet Satay Indonésiennes)

Ingredients

  • 1.5 lbs (700g) boneless, skinless chicken thighs, cut into 1-inch cubes
  • 1/4 cup (60ml) soy sauce
  • 2 tablespoons (30ml) honey
  • 2 cloves garlic, minced
  • 1 teaspoon (5g) ground turmeric
  • 1 teaspoon (5g) ground coriander
  • 1/2 teaspoon (2g) ground cumin
  • 1/4 teaspoon (1g) cayenne pepper
  • 1/4 cup (60g) creamy peanut butter
  • 2 tablespoons (30ml) lime juice
  • 1/4 cup (60ml) coconut milk
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, whisk together the soy sauce, honey, garlic, turmeric, coriander, cumin, cayenne pepper, peanut butter, lime juice, and coconut milk. Season with salt and pepper to taste.
  2. Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat the grill or stovetop grill pan over medium-high heat. Thread the marinated chicken onto the soaked skewers.
  4. Grill the skewers for 3-4 minutes per side, or until the chicken is cooked through and has nice grill marks.
