Indonesian Chicken Skewers Adventure (sate Ayam Adventure)

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into cubes
  • 1/4 cup soy sauce
  • 3 tablespoons kecap manis (sweet soy sauce)
  • 2 cloves garlic, minced
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 tablespoon brown sugar
  • 1 tablespoon vegetable oil
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, mix together soy sauce, kecap manis, garlic, coriander, turmeric, brown sugar, and vegetable oil to make the marinade.
  2. Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken cubes onto the soaked skewers.
  5. Grill the skewers for 3-4 minutes on each side, or until the chicken is cooked through and has a nice char.
  6. Serve the chicken skewers with steamed rice and peanut sauce.
