Indonesian Chicken Skewers Adventure (sate Ayam Adventure)

Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into cubes
- 1/4 cup soy sauce
- 3 tablespoons kecap manis (sweet soy sauce)
- 2 cloves garlic, minced
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1 tablespoon brown sugar
- 1 tablespoon vegetable oil
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, mix together soy sauce, kecap manis, garlic, coriander, turmeric, brown sugar, and vegetable oil to make the marinade.
- Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken cubes onto the soaked skewers.
- Grill the skewers for 3-4 minutes on each side, or until the chicken is cooked through and has a nice char.
- Serve the chicken skewers with steamed rice and peanut sauce.
