Ingredients

  • 1 whole chicken, cut into pieces
  • 2 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 4 cloves garlic, minced
  • 1 onion, thinly sliced
  • 2 inches galangal, sliced
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 8 cups chicken broth
  • Salt and pepper to taste
  • 2 tbsp cooking oil
  • 4 hard-boiled eggs, halved
  • 4 cups cooked rice vermicelli
  • 2 green onions, thinly sliced
  • Fried shallots for garnish

Instructions

  1. In a large pot, heat the cooking oil over medium heat. Add the garlic, onion, galangal, lemongrass, and kaffir lime leaves. Sauté until fragrant.
  2. Add the turmeric, coriander, and cumin powder. Stir well to combine.
  3. Add the chicken pieces and cook until they are no longer pink.
  4. Pour in the chicken broth and bring to a boil. Reduce the heat and let it simmer for 45 minutes.
  5. Season with salt and pepper to taste.
  6. To serve, place a portion of rice vermicelli in a bowl. Top with the chicken pieces, a halved hard-boiled egg, and ladle the hot soup over it.
  7. Garnish with sliced green onions and fried shallots.
