Indonesian Fragrant Rice Love (nasi Liwet Love)

Ingredients

  • 2 cups jasmine rice
  • 1 3/4 cups coconut milk
  • 2 cups water
  • 4 shallots, finely chopped
  • 3 cloves garlic, minced
  • 2 bay leaves
  • 2 teaspoons salt
  • 1 teaspoon sugar
  • 4 chicken thighs, skin-on
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground white pepper
  • 4 cups water

Instructions

  1. Rinse the jasmine rice until the water runs clear, then drain.
  2. In a large pot, combine the coconut milk, water, shallots, garlic, bay leaves, salt, and sugar. Bring to a boil over medium heat.
  3. Add the rinsed rice to the pot and stir to combine. Reduce the heat to low, cover, and simmer for 20 minutes, or until the rice is cooked and the liquid is absorbed.
  4. While the rice is cooking, prepare the chicken. In a bowl, mix the ground coriander, turmeric, cumin, ginger, and white pepper. Rub the spice mixture all over the chicken thighs.
  5. In a separate pot, bring 4 cups of water to a boil. Add the seasoned chicken thighs and cook for 15-20 minutes, or until the chicken is fully cooked.
  6. Once the rice and chicken are ready, serve the fragrant rice with the cooked chicken thighs on top.
