Ingredients

  • 8 oz. egg noodles
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 1 carrot, julienned
  • 1 red bell pepper, thinly sliced
  • 1 cup cabbage, shredded
  • 2 tbsp soy sauce
  • 1 tbsp sweet soy sauce (kecap manis)
  • 1 tsp chili paste
  • 1 tsp sugar
  • 4 eggs
  • Salt and pepper to taste

Instructions

  1. Boil the egg noodles according to package instructions. Drain and set aside.
  2. Heat the vegetable oil in a large pan or wok over medium-high heat. Add the garlic and onion, and sauté until fragrant.
  3. Add the carrot, bell pepper, and cabbage to the pan. Stir-fry for 2-3 minutes until the vegetables are slightly softened.
  4. Push the vegetables to one side of the pan and crack the eggs into the empty space. Scramble the eggs and then mix them with the vegetables.
  5. Add the cooked noodles to the pan, followed by soy sauce, sweet soy sauce, chili paste, and sugar. Toss everything together until well combined.
  6. Season with salt and pepper to taste. Cook for another 2-3 minutes, stirring constantly.
  7. Divide the noodles into serving plates and serve hot.
