Ingredients
- 8 oz. egg noodles
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 small onion, thinly sliced
- 1 carrot, julienned
- 1 red bell pepper, thinly sliced
- 1 cup cabbage, shredded
- 2 tbsp soy sauce
- 1 tbsp sweet soy sauce (kecap manis)
- 1 tsp chili paste
- 1 tsp sugar
- 4 eggs
- Salt and pepper to taste
Instructions
- Boil the egg noodles according to package instructions. Drain and set aside.
- Heat the vegetable oil in a large pan or wok over medium-high heat. Add the garlic and onion, and sauté until fragrant.
- Add the carrot, bell pepper, and cabbage to the pan. Stir-fry for 2-3 minutes until the vegetables are slightly softened.
- Push the vegetables to one side of the pan and crack the eggs into the empty space. Scramble the eggs and then mix them with the vegetables.
- Add the cooked noodles to the pan, followed by soy sauce, sweet soy sauce, chili paste, and sugar. Toss everything together until well combined.
- Season with salt and pepper to taste. Cook for another 2-3 minutes, stirring constantly.
- Divide the noodles into serving plates and serve hot.
