Indonesian Fried Rice Fiesta (nasi Goreng Fiesta)

Ingredients
- 4 cups cooked white rice
- 3 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 onion, finely chopped
- 2 chicken breasts, cooked and shredded
- 2 eggs
- 3 tablespoons soy sauce
- 1 tablespoon sweet soy sauce (kecap manis)
- 1 teaspoon shrimp paste (terasi), optional
- 1 teaspoon chili paste, or to taste
- Salt and pepper to taste
- 4 green onions, thinly sliced
- 4 tablespoons fried shallots, for garnish
Instructions
- Heat 2 tablespoons of vegetable oil in a wok or large skillet over medium-high heat.
- Add the minced garlic and chopped onion, and stir-fry until fragrant.
- Push the garlic and onion to the side of the wok, and pour in the beaten eggs. Scramble the eggs until they are cooked through, then mix them with the garlic and onion.
- Add the cooked chicken to the wok, and stir-fry for 2-3 minutes.
- Add the cooked rice to the wok, and stir-fry for 3-4 minutes, breaking up any clumps of rice.
- Stir in the soy sauce, sweet soy sauce, shrimp paste, and chili paste. Season with salt and pepper to taste.
- Add the sliced green onions, and stir-fry for another 1-2 minutes.
- Transfer the fried rice to serving plates, and garnish with fried shallots.
