Indonesian Goat Soup Serenade (sop Kambing Serenade)

Ingredients

  • 500g goat meat, cut into pieces
  • 2 tomatoes, diced
  • 3 shallots, finely chopped
  • 4 cloves garlic, minced
  • 2 lemongrass stalks, bruised
  • 5 kaffir lime leaves
  • 2-inch galangal, sliced
  • 1-inch ginger, sliced
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp ground white pepper
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 2 L water
  • 2 tbsp oil
  • 2 tbsp fried shallots for garnish

Instructions

  1. In a large pot, heat the oil over medium heat. Add the shallots and garlic, and sauté until fragrant.
  2. Add the goat meat to the pot and cook until browned.
  3. Stir in the tomatoes, lemongrass, kaffir lime leaves, galangal, and ginger. Cook for a few minutes until the tomatoes soften.
  4. Add the coriander powder, cumin powder, turmeric powder, white pepper, salt, and sugar. Stir well to coat the meat and spices.
  5. Pour in the water and bring the soup to a boil. Reduce the heat to low, cover the pot, and simmer for 1.5 hours or until the meat is tender.
  6. Once the meat is tender, remove the lemongrass, kaffir lime leaves, and galangal from the soup.
  7. Divide the soup into serving bowls and garnish with fried shallots. Serve hot with steamed rice or crusty bread.
