Indonesian Lamb Rogan Josh

Ingredients

  • 1 kg lamb, cut into cubes
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 1-inch ginger, grated
  • 3 tomatoes, pureed
  • 1/2 cup yogurt
  • 2 tbsp Indonesian sweet soy sauce (kecap manis)
  • 2 tbsp Rogan Josh spice mix
  • 1 cinnamon stick
  • 4 cardamom pods
  • 1/4 cup vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the cinnamon stick and cardamom pods, and sauté until fragrant.
  3. Add the onions, garlic, and ginger, and cook until the onions are soft and translucent.
  4. Add the lamb cubes and brown on all sides.
  5. Stir in the Rogan Josh spice mix and cook for 2 minutes.
  6. Pour in the tomato puree, yogurt, and Indonesian sweet soy sauce. Season with salt.
  7. Cover and simmer for 1 hour, or until the lamb is tender.
  8. Garnish with fresh cilantro before serving.
