Indonesian Lamb Rogan Josh
Indonesian Lamb Rogan Josh is a flavorful and aromatic dish that combines the rich spices of Indian cuisine with the unique flavors of Indonesian cooking.
Ingredients
- 1 kg lamb, cut into cubes
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 1-inch ginger, grated
- 3 tomatoes, pureed
- 1/2 cup yogurt
- 2 tbsp Indonesian sweet soy sauce (kecap manis)
- 2 tbsp Rogan Josh spice mix
- 1 cinnamon stick
- 4 cardamom pods
- 1/4 cup vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the cinnamon stick and cardamom pods, and sauté until fragrant.
- Add the onions, garlic, and ginger, and cook until the onions are soft and translucent.
- Add the lamb cubes and brown on all sides.
- Stir in the Rogan Josh spice mix and cook for 2 minutes.
- Pour in the tomato puree, yogurt, and Indonesian sweet soy sauce. Season with salt.
- Cover and simmer for 1 hour, or until the lamb is tender.
- Garnish with fresh cilantro before serving.
