Indonesian Lamb Stew (gule Kambing)
Indonesian Lamb Stew, also known as Gule Kambing, is a flavorful and aromatic dish that is popular in Indonesian Indian cuisine. This stew is made with tender lamb, potatoes, and a rich blend of spices, creating a comforting and hearty meal.
Ingredients
- 500g lamb, cut into chunks
- 2 large potatoes, peeled and cubed
- 3 shallots, finely chopped
- 4 cloves garlic, minced
- 2 tomatoes, diced
- 3 red chilies, sliced
- 2 stalks lemongrass, bruised
- 4 kaffir lime leaves
- 1-inch galangal, sliced
- 1-inch ginger, sliced
- 1 cinnamon stick
- 4 cardamom pods
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon sugar
- Salt to taste
- 2 tablespoons oil
- 4 cups water
Instructions
- Heat the oil in a large pot over medium heat. Add the shallots, garlic, red chilies, lemongrass, kaffir lime leaves, galangal, ginger, cinnamon stick, and cardamom pods. Sauté until fragrant.
- Add the lamb chunks and cook until browned.
- Stir in the turmeric powder, coriander powder, cumin powder, and sugar. Mix well to coat the lamb.
- Pour in the water and bring the stew to a boil. Reduce the heat, cover, and simmer for 30 minutes.
- Add the potatoes and tomatoes. Continue to simmer for another 20-30 minutes until the lamb is tender and the potatoes are cooked through.
- Season with salt to taste.
- Remove from heat and serve the Indonesian Lamb Stew hot with steamed rice.
