Indonesian Lamb Stew (gule Kambing)

Ingredients

  • 500g lamb, cut into chunks
  • 2 large potatoes, peeled and cubed
  • 3 shallots, finely chopped
  • 4 cloves garlic, minced
  • 2 tomatoes, diced
  • 3 red chilies, sliced
  • 2 stalks lemongrass, bruised
  • 4 kaffir lime leaves
  • 1-inch galangal, sliced
  • 1-inch ginger, sliced
  • 1 cinnamon stick
  • 4 cardamom pods
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon sugar
  • Salt to taste
  • 2 tablespoons oil
  • 4 cups water

Instructions

  1. Heat the oil in a large pot over medium heat. Add the shallots, garlic, red chilies, lemongrass, kaffir lime leaves, galangal, ginger, cinnamon stick, and cardamom pods. Sauté until fragrant.
  2. Add the lamb chunks and cook until browned.
  3. Stir in the turmeric powder, coriander powder, cumin powder, and sugar. Mix well to coat the lamb.
  4. Pour in the water and bring the stew to a boil. Reduce the heat, cover, and simmer for 30 minutes.
  5. Add the potatoes and tomatoes. Continue to simmer for another 20-30 minutes until the lamb is tender and the potatoes are cooked through.
  6. Season with salt to taste.
  7. Remove from heat and serve the Indonesian Lamb Stew hot with steamed rice.
