Ingredients
- 500g jasmine rice
- 200g chicken, sliced
- 200g beef, thinly sliced
- 200g shrimp, peeled and deveined
- 1 block of tofu, cubed
- 1 cup bean sprouts
- 4 hard-boiled eggs, halved
- 4 cups mixed vegetables (cabbage, long beans, spinach)
- 4 cups chicken broth
- 4 tablespoons sweet soy sauce
- 4 tablespoons sambal (chili paste)
- 4 tablespoons fried shallots
- 4 lime wedges
- Salt and pepper to taste
Instructions
- Prepare the jasmine rice according to package instructions.
- In a large pan, sauté the chicken, beef, shrimp, and tofu until cooked through. Season with salt and pepper.
- Blanch the mixed vegetables and bean sprouts in boiling water for 1-2 minutes. Drain and set aside.
- In a small saucepan, heat the chicken broth and season with sweet soy sauce.
- To assemble, place a serving of rice in a bowl, arrange the cooked meats, tofu, vegetables, and hard-boiled eggs on top. Drizzle with the hot chicken broth and sweet soy sauce mixture.
- Garnish with sambal, fried shallots, and a lime wedge. Serve hot.
