  • 1 cup bean sprouts
  • 4 hard-boiled eggs, halved
  • 4 cups mixed vegetables (cabbage, long beans, spinach)
  • 4 cups chicken broth
  • 4 tablespoons sweet soy sauce
  • 4 tablespoons sambal (chili paste)
  • 4 tablespoons fried shallots
  • 4 lime wedges
  • Salt and pepper to taste

Instructions

  1. Prepare the jasmine rice according to package instructions.
  2. In a large pan, sauté the chicken, beef, shrimp, and tofu until cooked through. Season with salt and pepper.
  3. Blanch the mixed vegetables and bean sprouts in boiling water for 1-2 minutes. Drain and set aside.
  4. In a small saucepan, heat the chicken broth and season with sweet soy sauce.
  5. To assemble, place a serving of rice in a bowl, arrange the cooked meats, tofu, vegetables, and hard-boiled eggs on top. Drizzle with the hot chicken broth and sweet soy sauce mixture.
  6. Garnish with sambal, fried shallots, and a lime wedge. Serve hot.
