Ingredients

  • 4 hard-boiled eggs, halved

  • 1 cup mixed salad greens
  • 1 cup crispy fried shallots
  • 1 cup roasted peanuts, crushed

Instructions

  1. In a large bowl, arrange the blanched green beans, bean sprouts, cabbage, carrots, cucumber, tofu, eggs, potatoes, tempeh, and mixed salad greens.
  2. Drizzle the peanut sauce over the salad.
  3. Garnish with crispy fried shallots and crushed roasted peanuts.
