Indonesian Nasi Goreng with Prawns (Nasi Goreng Indonésien aux Crevettes)

Ingredients

  • 3 cups cooked white rice
  • 200g prawns, peeled and deveined
  • 3 eggs, beaten
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 red chilies, thinly sliced
  • 1 tablespoon sweet soy sauce (kecap manis)
  • 2 tablespoons soy sauce
  • 1 teaspoon shrimp paste (terasi)
  • 1 teaspoon tamarind paste
  • 1 teaspoon sugar
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Heat 1 tablespoon of oil in a wok or large frying pan over medium heat.
  2. Add the beaten eggs and scramble until cooked. Remove from the wok and set aside.
  3. Heat the remaining oil in the wok and sauté the onion, garlic, and chilies until fragrant.
  4. Add the prawns and cook until they turn pink and are cooked through.
  5. Stir in the rice, sweet soy sauce, soy sauce, shrimp paste, tamarind paste, sugar, salt, and pepper. Mix well.
  6. Add the scrambled eggs back into the wok and toss everything together until heated through.
  7. Transfer the Nasi Goreng to serving plates and serve hot.
